Traditionally made and lovingly matured, this mature and mellow cheese is the pride of our Master Cheesemakers. The perfect Blue Shropshire will be a rich orange in colour with distinctive blue veining and a golden crust. It is best accompanied by a good English brown Ale or, as with Stilton, by a rich fortified wine.
